I did a quick search and found this thread and which they provide this link.
The link has a sample layout of how the files should sort out.
I guess this is a two part question you're asking.
1. Are the GPS coordinates logged and if so, in what form?
2. If GPS coordinates are logged, are there programs that can layout the coordinates on a map? Of course there can always be a program created that interprets it and lays it out via the Google Maps API.
Don't know if it is an answer to your question but the gps stats can be exported by e.g. Dashcam viewer to the .kml format.
