I'm looking for a dash cam, dual channel preferably, that I can reach up and turn left or right to capture what's occurring beside me or at my windows. Most quality cams I'm seeing are pretty well fixed with slight vertical adjustments.

Any recommendations?

Won't find what you're looking for in a dual cam configuration. You need a cam that can hang off an adjustable ball-joint tripod head. Whatever you get, will have to mounted it lower than usual; so that you don't need to move the rear view mirror when the camera angle needs to be adjusted.

Something like this -

Not 2 channel but Garmin 55 can swivel 365 degrees.

The G1W-S can swivel when using the mirror mount.
However, it is not discrete. It is more like a brick on a stick and single channel.

it is mostly down to whatever mount you use

but keep in mind, if you keep the adjuster nut slack enough to allow for easy swivel, in the event of an incident involving your car, it'll jolt the dashcam skywards because it's not tightly secured

You see on youtube when a car hits something and all of a sudden you only see clouds and sky, when you wanna be seeing the face of the person running from the car that just hit you
