Was looking at an overnight clip of my car sitting in the driveway in basically total darkness and see a silver/white flickering dot on the lower center? I've heard of hot pixels but not sure if that is what this is.

All dashcam sensors have them, but they are masked dynamically depending on how dark the scene triggers the process. Auto pixel calibration happens once it's dark enough to mask most hot pixels.

Here is the explanation.

So should it have stayed visible in the video all night long then?

the hot pixels (all dashcam sensors have them) are masked dynamically in software, you may see them come and go under certain lighting conditions, depends how much ambient light is available as to how aggressive the masking gets

Not necessarily. I've seen them come and go in some of my cameras through the duration of a recording session.
