So I think I'm close to giving this Analog / IP Camera and DVR setup a try:

My remaining concern is power consumption while the car is parked. I know I can use a battery voltage cut off switch, but does anyone have any real-life data on how long they have been able to record across multiple cams without driving?

Thanks!

it really depends on which camera/dvr is being used, they all have diferrent rating. for example the ones that you posted said that it uses 15W max.

but that's only for the DVR, you also need to consider for the cameras. if you go for ip, you will also need a switch. you may go for a PoE switch to reduce the cabling requirement etc, but most of those device are not optimized to be using low energy.

One solution is combination of external battery pack + cut off device.
Connect battery cut off switch to fuse box ( constant battery voltage fuse ), then cut off switch to high capacity external battery pack which has automatic switch off function when fully charged and then to dash camera.
