The menu usually lists it as "screen saver" in most cams. Selecting "off" should leave the screen display running constantly (you're turning the screensaver off so the display stays on). Can be a bit confusing ;)

Do be aware that in many places, having that display on while driving may be illegal
. And it adds to the internally-generated heat of a working dashcam which is not good as they can overheat and stop recording. Plus these screens aren't really intended to be left on constantly; they aren't designed to be as robust as a computer monitor or TV. There's really not much to gain having it on as the cam should have an indicator LED to let you know it's working. And seeing a view on the screen doesn't necessarily mean it is being recorded to the SD card.

All this is why most of us go with the screensaver, usually at it's shortest time setting.

Screen saver or LCD time out is what the menu are most often called, and most often there is a OFF setting beside the 1-2-3-5 minutes that seem to be the popular LCD time out options.
I also think there are some cameras that do not have the OFF setting, and it is also advised against doing for a few reasons.

1: with the LCD screen on all the time the camera get hotter, and hotter "burning" most often mean shorter lifetime
2: some states / countries it is actually illegal to have a live screen going, even if it is just depicting the road in front of you or behind you.
