At first I thought I had screwed up setting the clock, but i've found that's not correct.

When i first get in the car the cam turns on. It shows the correct time. But when the car starts backing out the GPS latches on right? Well when that happens it completely changes the time stamp.

example. This morning, when GPS hooked up it went back exactly 6 hours.

is there something I can fix here? it's very annoying. I don't even see a timezone, or is that the first number in the 'date/time' section?

anyone got any idea?

Yes, it is the first number in the date / time section. Here is the part from the manual:
DATE AND TIME
Here you can set the system date and time manually. The date/time
information will be automatically updated if GPS satellites are connected.
00 2014 / 11 / 11 12:12
time zone date time
The time zone, corrected for daylight saving time, will need to be set before the
GPS signal can correctly update the time.

ahh.... jeeze. So what you're telling me is "Reading is fundamental" lol

I missed that completely. But thank you!
