Why? What's the theory behind that? Why would the rear camera cause the system to crash weekly while in parking mode?

I have seen the A129 freeze up when there is an issue with the rear cable. Since your issue appears to only happen in parking mode, it’s probably not the issue, but you where looking for things to try and that is something to keep in mind.
Are you using Viofo stock firmware or modified firmware?
Are you using the 3-wire hardwire kit?
Are you using MP4 files or .ts files?
Are you powering through the mount or direct into the camera?

SanDisk High Endurance Video Monitoring Card - 64gb.

Only freezes have happened in parking mode (so far). Currently beta firmware though previous crash happened with stock firmware. Powered constantly via cigarette lighter outlet / usb. Still waiting on unicorn 3 wire kit.

did you reset to defaults the settings in a Menu after firmware install? it did help me a number of times.

Same here. We have two cars, same setups with 129 Duo and both crashing after week or two. Both in low bitrate 24/7 parking mode.
