Is there anyway to have a pin or password to stop people from tampering with the installed dashcam? I am using a few of these in our trucks and have had a few instances where someone has played with certain settings.

you will find as others have that even if you had something to restrict them playing with settings they'll just pull power, cover the lens etc
 
Best option would be to wait for the new systems with remote camera, and then put the main unit in a DIY metal box that is hidden and locked.
But as Jokiin say if they get too pissed they will just block the lens.

This is the best solution. Even if it were tamper-proof, you'd still be left with an employee whose honesty is suspect, and IMHO nobody needs someone like that around in their business. Maybe not immediate dismissal on the first offense, but definitely some kind of penalty, and definitely dismissal when it's a blatant disregard for company rules. To further employee understanding and cooperation I'd also not be terribly critical of them in any reviewed videos unless a big problem is seen. Nobody is perfect and as long as there's no big problems you're doing OK.

Yeah like any company have time to even look over the days recordings even at a 5:1 speed.
But of course there are people that don't want to be accountable for any actions of theirs, no matter how wrong it might be.

To be fair, the two aren’t mutually exclusive...
