I still say this is what digital cameras do when you overexpose some but not all of the colour channels. There is less problem with the raw image because raw has a larger dynamic range than jpg so may not overexpose as soon.

Try photographing a pure red flower with just about any digital camera and you will have difficulty unless you use some -EV.

Next time you are using the camera in sunny conditions with bright highlights, use a bit more -EV and the problem will disapear.
 
In the meantime, one taken in 2009 with a point and shoot Canon A540 (JPG directly from camera):

The petals on the left of that image all have a lot of over exposed red causing them to turn a grey red with no texture instead of the strong red with texture that we see in the top right petal. Large areas with all the pixels having a value of 255 for the red.

(it won't be easy to find a red flower in winter though).
Use the helmet again, with strong lighting...
 
Samsung has been using really good image sensor and auto focus mechanisms in their latest galaxy phones. My note 3 was a huge step up from my s3, and my wife's s6 was a huge step up from her s4. Probably a large part of their high cost.
 
I don't know how you got the colours so dull on the Git2 image, they don't appear over exposed in this image, but I can see that you have used a very different exposure from the other cameras since there is a lot of detail in the dark background which is just pure black in the images from the other cameras.

The other cameras are primarily photo cameras, the Git2 is an action camera using a processor designed for dashcams so intended mainly for video, it is not surprising if the default exposure is different. You need to keep things in the centre of the exposure range for bright colours.
 
The engineer replied this mainly related to the gamma settings, but we can not do much for that, to improve this part, will affect other things.
