Personally I'd rather have the slightly over saturated look than the anaemic look you've achieved in Lightroom. There have been a few complaints in the past about saturation on dashcams being too low. Many prefer a more saturated look.
If you're looking for a camera for filming, you're probably better off mounting an action camera on the dash and capturing the desired footage that way. As others have said, it's a dash camera, so it's possible to forgive a bit of over saturation. I personally think the colours could be turned down just slightly but I certainly wouldn't like the anaemic look. Maybe the real answer here is to put saturation adjustments in the settings and then a user can turn it up or down away from the default to their hearts content.
