If I have two Power Core powerbanks, one for my front cams and one for my rear, is that going to cause trouble with my alternator / car electrics?

The electrics should be OK, as long as you don't blow any fuses by drawing 20A from a 5A supply.

The alternator will have to do extra work, and is going to get warmer than normal, so it is going to have a shorter lifespan than normal. Hard to say how much shorter, but if you swap cars at 3 years old then I wouldn't worry. If you keep your cars then also don't worry, just don't be too surprised if you have to replace the alternator, or maybe just the alternator brush/regulator pack after 7 years instead of 14 years. It also depends on how big an alternator you have, big cars tend to have bigger and more capable ones than small cars.
