Post processed footage might also be a issue in a court of law, where raw evidence is a must.

Yes and no. Let's say you have a 2020 Silver Volvo hit your car and run. The dashcam captured a partial plate. AI is able to enhance the plate recognition and you're able to pull off enough numbers leading to a 2020 Silver Volvo. The police find that car was damaged or recently repaired. A court would accept this as evidence.
It would be a matter of leading back to the vehicle and determining if it was the correct person / car beyond a reasonable doubt.
