Newbie here, looking for a dash cam that records and saves data such as location and speed on a loop, nothing elaborate, just something I can use to verify speed at specific time and location. Recommendations?

Pretty much any cam equipped with GPS can do this for you, plenty of them to choose from. Do be aware that not all GPS units function as well as you might expect. Some take several minutes to achieve a 'cold lock' so that the first several minutes of your daily drive may not have any GPS data recorded. Do note that some also have a serious lag-time with speed changes, and TBH all will have that to some degree. And do be aware that most courts will not accept dashcam GPS data as proper evidence in and of itself.
So what price range are you looking at? And front-only or two channels? Can you use any form-factor or is there one you'd prefer? Are you interested in any other features? I know, lots of questions, but given your answers there is almost certain to be a cam out there which you will like that will do what you need of it at least reasonably well and maybe very well.
