The best sensor currently being used in dashcams is the Sony IMX335, which gives Quad HD resolution at 60fps with good dark performance.
For 4K resolution, recent dashcams have been using the Sony IMX415 which can give 4K at 60fps, although it is normally 30fps in dashcams.
For FHD resolution, the Sony IMX307 is probably the most used at the moment in decent dashcams, but of course there are quite a lot of older FHD designs about being sold cheaply that use older sensors that are often far worse at night time, and not so many new FHD cameras because most people want 4K and often make do with QHD.
Not sure those are actually latest and greatest, but they are what is being used.
Not many non-Sony sensors being used lately, that may change soon.
